Gala apple spirit

For the Felsenriss Gala apple spirit, only apples from our own cultivation are used. These apples grow in South Tyrol at an altitude of about 400m above sea level under controlled conditions. While apples intended for the trade are usually harvested a little earlier to ensure better storability, the apples for the production of noble brandies are left on the tree until fully ripe. This allows them to reach their full flavor and highest sugar content. After harvesting, they are processed immediately. In addition to optimal ripeness, manual labor also plays an important role. Only when each apple is cleaned, individually checked for damage, and then fermentation is immediately initiated, can the highest quality be achieved.

After fermentation is complete, the mash is quickly distilled into Felsenriss Gala apple spirit using the double distillation process and stored in stainless steel barrels for about half a year. This allows the fresh and typical apple aroma to develop optimally. The final touch is the blending with naturally pure Völlaner spring water.
